Carottes Râpées (Carrot Salad)

The hugely popular French dish carottes râpées is a deceptively simple carrot salad packed with huge flavors. From fine dining to a healthy on-the-go snack, this recipe is versatile and tantalizingly flavorful. Ingredients

  • 2 lbs (900 g) medium carrots, peeled
  • Pinch of kosher salt
  • 1 1/2 tsp (7.5 ml) grated lemon rind
  • 2 Tbsp (30 ml) fresh lemon juice
  • 1 tsp (5 ml) Dijon mustard
  • Dash of ground red pepper
  • 2 garlic cloves, grated
  • 1/4 cup (60 ml) extra-virgin olive oil
  • 1/4 tsp (1.25 ml) freshly ground black pepper
  • 2 Tbsp (6 g) thinly sliced chives

Directions

  1. Cut the carrots into long, thin strips and place them in a large bowl. Season them a pinch of salt and set aside in the refrigerator.
  2. In a large bowl, whisk together the grated lemon rind, fresh lemon juice, Dijon mustard, red pepper, garlic, and olive oil. Season the dressing with black pepper and another pinch of salt.
  3. Pour half of the dressing over carrots. Refrigerate for 1 hour.
  4. Add the rest of the dressing to the salad and sprinkle it with the thinly sliced chives.
  5. Serve chilled.
