Clafoutis (Fruit Custard)

Clafoutis is a traditional French dessert made with a batter similar to flan. It is usually filled with black cherries, but sometimes with other fruits—such as apples, plums, berries, or pears—or even with chocolate and hazelnuts. Clafoutis is dusted with powdered sugar and served warm. Recipe Servings: Serves 6 to 8

Ingredients

  • 1 1/4 cups (300 ml) milk
  • 2/3 cup (130 g) sugar, divided
  • 3 eggs
  • 1 Tbsp (15 ml) vanilla extract
  • 1/8 tsp (0.625 ml) salt
  • 1/2 cup (55 g) flour
  • 3 cups (675 g) cherries, pitted
  • powdered sugar, for garnish

Directions

  1. Preheat oven to 350 degrees F (180 degrees C).
  2. In a blender, combine milk, eggs, vanilla, salt, flour, and half of the sugar. Blend well.
  3. Grease an 8-cup (1.9-L) baking dish. Pour a 1/4-inch (6.35-mm) layer over the bottom of the dish. Reserve remaining batter for later.
  4. Bake until the top of the batter is firm but it is not baked through, about 8 to 10 minutes. 
  5. Distribute the cherries evenly over the baked batter. Sprinkle with remaining sugar. 
  6. Pour the remaining batter over the cherries. Bake until a toothpick inserted in the center comes out clean, about 45 to 60 minutes.
  7. Sprinkle clafoutis with powdered sugar and serve.
