Fondue au Fromage (Cheese Fondue)

Fondue simply means “melted” in French, a straightforward title for this world-famous French classic. A three-course fondue meal often contains a cheese starter, a hot oil cook-at-the table meat entrée, and a decadent chocolate dessert. Armed with the requisite fondue set, the possibilities are nearly endless. Fondue au fromage is a perfect comfort food that tempers the rich and fatty melted cheese with crisp bread and fresh vegetables. A French classic that is always in vogue at parties, fondue is also surprisingly simple to prepare. Recipe Servings: Serves 4

Ingredients

  • 1 clove garlic, halved
  •  2 lb (900 g) melting cheese, shredded
  • 1/2 cup (120 ml) dry white wine
  • 1 shot of kirsch
  • 1–2 tsp (5–10 ml) potato starch
  • 1–2 baguettes, sliced

Directions

  1. Rub one half of the garlic clove around the inside of the fondue set.
  2. Place the fondue pot on the stove and add the cheese and white wine. Heat gently until the cheese melts and the mixture is smooth.
  3. In a small bowl, combine the kirsch and potato starch. Add the mixture to the pot and cook the fondue, stirring occasionally, as the mixture gently bubbles. After 5 minutes, remove mixture from heat.
  4. Light the flame in the fondue set and place the pot on its stand. Ensure that the mixture continues to gently simmer.
  5. Serve with sliced baguette and, preferably, a set of fondue forks.
