Mousse au Chocolat (Chocolate Mousse)

Mousse au chocolat (chocolate mousse) is a thick, rich dessert made with dark, bittersweet chocolate. It sometimes includes orange, coffee, or other flavorings, but the traditional version is scented with vanilla and includes no cream. Some cooks garnish this decadent dessert with chocolate curls, mint, and/or whipped cream. Recipe Serving: Serves 3–6

Ingredients

  • 7 oz (200 g) bittersweet chocolate, chopped
  • 1 3/4 oz (50 g) butter
  • 6 eggs, separated
  • 1 vanilla bean
  • 3 Tbsp (45 ml) sugar
  • Pinch of salt

Directions

  1. Split the vanilla bean and scrape the seeds into the egg yolks.
  2. Melt the chocolate and butter in a double boiler.
  3. As soon as the chocolate is completely melted, remove from heat and beat in the egg yolks.
  4. Beat in the sugar, and transfer the mixture to a mixing bowl.
  5. Separately, beat the egg whites and salt until stiff but not dry.
  6. Gently fold the egg whites into the chocolate mixture.
  7. Chill thoroughly before serving. Garnish with a little lightly sweetened whipped cream.
