Purée de Poireau (Leek Puree)

Purée de poireau, or pureed leeks, commonly accompany French roasts and other meat entrées. Leeks are not only rich in flavor but also in fiber, antioxidants, and vitamins. With their mild, lightly sweet, onion-like flavor, leeks need few seasonings to turn them into a delicious side dish. Recipe Servings: Serves 4

Ingredients

  • 4 medium leeks
  • 8 cups (2 l) water
  • 1 1/2 tsp (7.5 g) sea salt
  • 1/2 tsp (2.5 ml) pepper
  • 2 Tbsp (30 g) salted butter
  • 1 Tbsp (15 ml) chives

Directions

  1. Trim roots off leeks, and cut into inch- (2.5 cm-) long pieces.
  2. Bring leeks, water, and 1 teaspoon (5 ml) salt to a boil. Simmer until tender, about 15–20 minutes.
  3. Process leeks in blender or food processor. Return to pot.
  4. Add remaining salt, pepper, and butter, stirring and mashing.
  5. Serve immediately, garnished with chives.
