Salade Niçoise
Salade Niçoise is a traditional dish from Provence that has become a staple in bistros across France. Although many popular versions of this salad include potatoes, they are not part of the traditional composition.

Ingredients
- 2 tomatoes, sliced
- 1/2 cucumber, sliced
- 1/2 lb (225 g) green beans, blanched and drained
- 1 bell pepper, sliced
- 1 onion, thinly sliced
- 2 eggs, hard-boiled, sliced
- 8 anchovy fillets
- 7 oz (210 g) tuna, baked, cooled, flaked
- 10 black niçoise olives
- 3 Tbsp (45 ml) olive oil
- 1 clove garlic, halved
- 4 leaves basil, shredded
Directions
- Rub a large serving bowl with garlic.
- Combine tuna, vegetables, olives, and eggs in the prepared bowl.
- Garnish with anchovies, sprinkle with basil, and drizzle with olive oil.
- Serve chilled, and toss together at the table before serving.
