Salade Niçoise is a traditional dish from Provence that has become a staple in bistros across France. Although many popular versions of this salad include potatoes, they are not part of the traditional composition.

Ingredients

  • 2 tomatoes, sliced
  • 1/2 cucumber, sliced
  • 1/2 lb (225 g) green beans, blanched and drained
  • 1 bell pepper, sliced
  • 1 onion, thinly sliced
  • 2 eggs, hard-boiled, sliced
  • 8 anchovy fillets
  • 7 oz (210 g) tuna, baked, cooled, flaked
  • 10 black niçoise olives
  • 3 Tbsp (45 ml) olive oil
  • 1 clove garlic, halved
  • 4 leaves basil, shredded

Directions

  1. Rub a large serving bowl with garlic.
  2. Combine tuna, vegetables, olives, and eggs in the prepared bowl.
  3. Garnish with anchovies, sprinkle with basil, and drizzle with olive oil.
  4. Serve chilled, and toss together at the table before serving.
